Summer Ice Cream Cake

It has been a very hot and humid spring here and summer has just begun. I can’t stop thinking about the cool, creamy taste of ice cream.

I love to run through McDonald’s and get a vanilla ice cream cone. I just looked up the calorie content and it is not too bad: 150 calories and 3.5 grams fat. All in all it is not a bad little snack.

I have an easy and delicious recipe for Ice Cream Cake. My family loves it. You can use any combination of ice cream and cookies and you can decorate the top with any kind of toppings, sprinkles, candies, or frostings.

Ice Cream Cake

½ gallon ice cream
1 stick of butter
1 package of cookies

Put ½ gallon of ice cream out to soften.

Crunch up a package of cookies in a zip lock bag with a rolling pin and pour into a 13X9 inch pan using enough to make a crust. Save some to put on top of cake if desired.

Melt 1 stick of butter and pour over cookie crumbs.

Press into a crust. Spread softened ice cream over crust.

Cover and freeze overnight.

Cut ingredients in half for a 9X9 inch pan.

I am just thrilled that the USA Soccer team won the other day. We have an awesome team! They will be playing again on Saturday against Ghana. Go USA!
